My Personal Experience with the Paleo Diet and Lifestyle
After a knee injury and a slow recovery, the sedentary life took me over. The result: a sneaky weight gain! Try as I may, the weight just wouldn’t come off! A friend suggested I seek help through acupuncture. One of the first things my acupuncturist, Nathalie Trees, LAc., suggested is that I go on the Paleo Diet. I went ahead and looked it up on the Internet (like we do), and just started cooking with the suggested foods and eliminated those that are not on the list. It was easy for me to be my own paleo chef diet consultant because of my professional cooking expertise and creative abilities with food preparation. The results have been remarkable!
So, what’s a Paleo Diet?
Before agriculture and dairy farming existed, humans ate a lot of meat, fish, fruits, vegetables, nuts & seeds. That’s basically it! “Oh, I thought, that means no cheese, no milk products, not even yogurt! And no grains like wheat, corn, rice, or even beans! What’s left seems kind of boring until I put on my apron, started cooking and tried it!
The results are: I haven’t been hungry, I enjoy the foods prepared on the Paleo Diet, and I lost 30lbs in 3 months! I feel fabulous, have more energy, sleep well and don’t miss any food I was indulging in before. I used to eat ice cream, cheese and crackers, bean and cheese burritos which I thought were good for me! Now thanks to my insight as a paleo diet consultant, I have a piece of grilled meat, chicken or fish with a salad or sauteed veggies for dinner and a low sugar 40 calorie juice pop for dessert.
The food is easy to fix, and quite yummy! I love making a delicious blender shake in the morning and if I know I’m going to need a lot of energy for the day, I eat a piece of Bacon or Sausage and I’m on my way! For a light lunch, I eat a piece of fruit & a 1/4c of raw almonds. I eat a full Paleo Style early dinner consisting of a 4oz piece of fish, chicken or meat with a salad dressed with lemon juice, herbs and olive oil. If I want to get creative with my paleo diet there are so many different options to choose from, but the trick for me is to just keep it simple. The paleo diet really is simple!
Who Recommends the Paleo Diet?
My favorite thing about the Paleo Diet is that it works! As it turns out, Dr. Loren Cordain, PhD, professor of health and exercise science at Colorado State University and author of ‘The Paleo Diet’ says ‘this diet has a healthy ratio of saturated-to-unsaturated fatty acids, it lessens the body’s glycemic load, increases vitamin and nutrient consumption, and contains an optimal balance of protein, fat and carbohydrates.’ No wonder it works!
